Harvesting Knowledge

In a compelling presentation to Year 10 Hospitality students, OzHarvest sheds light on two pressing issues facing our society: food waste and food insecurity. Despite there being enough food globally, one-third of all food produced goes to waste, with Australia ranking as the 10th most wasteful nation. This food waste contributes to climate change, responsible for 10% of global greenhouse gases. On the flip side, millions go hungry every year, with 1 in 9 people experiencing food insecurity, including 1.3 million children. Astonishingly, 3 billion people cannot afford a healthy diet. In Australia, 1 in 6 people, including 54% who are employed, struggle with food insecurity, with 3 in 5 facing it for the first time. OzHarvest's message is clear: it's time for action to bridge the gap between food waste and food insecurity, creating a more equitable and sustainable future.

After the presentation the Year 10 Hospitality students embarked on a creative culinary adventure, transforming reclaimed food items into delectable dishes. With innovation and sustainability at the forefront, they crafted a vibrant green soup and aromatic pesto that showcased the magic of upcycled ingredients. From wilted greens to surplus herbs, no food item went to waste as these budding chefs honed their skills and tasted the delicious results of their eco-conscious efforts. This hands-on experience not only expanded their culinary repertoire but also instilled a deeper appreciation for sustainable cooking practices, proving that with creativity and a dash of enthusiasm, even 'rescued' ingredients can shine in the kitchen.
